 Here at Great Harvest in Bozeman, we love fall. From the sweet taste of our pumpkin favorites to the more savory vegetables that are in season during this time of the year, there is much to be enjoyed. We can think of no better way to enjoy fall vegetables than by putting them together with a culturally delicious spice, like curry. It is with this warm and savory delight in mind that we would like to share a fall vegetable curry recipe with you today. 

What You’ll Need

1 ½ teaspoons of Olive Oil
1 cup peeled and diced sweet potatoes (a fall favorite)
1 cup of small cauliflower florets
¼ cup of thinly sliced yellow onion 
2 teaspoons curry powder (for extra spice-add more, but be careful)
½ cup of vegetable or chicken broth
¼ teaspoon of salt
1 can of chickpeas/garbanzo beans, rinsed and drained
1 can of diced tomatoes with juice
2 tablespoons of chopped fresh cilantro (optional)
½ cup of plain Greek yogurt-you may choose to use reduced or non-fat

Here’s What to Do

- In a large, nonstick skillet, heat the olive oil on medium heat
- Add sweet potatoes and saute for 3 minutes
- Add cauliflower, onion, curry, and cook for 1 more minute. Be sure to stir the mixture continuously 
- Add broth, salt, chickpeas, and tomatoes
- Bring mixture to a boil
- Cover and reduce heat, allowing it to simmer for 10 minutes
- Stir occasionally
- If desired, add cilantro
- Serve with Greek yogurt
