When it comes to combining fruit with pasta, perhaps you think of mandarin oranges or strawberries, but have you ever considered a pasta with peaches? If not, you might just be missing out on one of the most interesting, and delicious combinations. It’s still cold outside, but there are many of us who are ready for spring. Why not keep yourself warm and provide a taste of spring with this tasty Peach Pasta recipe provided for you today by Great Harvest in Bozeman. 

What You’re Going to Need:

About 4 ounces of thin pasta-whichever kind you prefer
Salt, for the water
3 to 5 ripe peaches or nectarines-if you can’t decide you can always use both
5 large basil leaves
1 ½ teaspoons sea salt
3 tablespoons of extra virgin olive oil
black pepper to taste

Now to Cook: 

Boil pasta, add salt to water-cook until al dente
Cut the peaches into ½ inch chunks-you may choose to peel them or keep the skin on-either way works well
Tear the basil leaves into small pieces or cut with knife
In a bowl toss peaches, sea salt and 2 tablespoons of olive oil
After the pasta is cooked, drain and place in another bowl
Add peaches and oil, along with peach juice
Add the basil leaves
Taste, and add seasoning as needed
Add the remaining olive oil
You can immediately serve the pasta if you want it hot or you can refrigerate it and serve it cool-both are excellent options

*If you choose to serve the pasta chilled then it’s best to leave the basil leaves out until just before serving, otherwise you have wilted basil leaves in your pasta!
