 Spring is fast approaching, and here at Great Harvest in Bozeman we’re thinking of what seasonal treats we’ll be enjoying when it arrives. Springtime is all about fresh-tasting, light food, so we thought we’d provide you with a recipe for an old-fashioned shortcake that’s perfect for a balmy spring afternoon.

Ingredients (makes 8 helpings):

2 punnets strawberries (washed and quartered)
½  cup sugar
¼ cup sugar
2 tablespoons sugar
2 ¾ cups all-purpose flour
4 teaspoons baking powder
¾ cup butter (cold, cut into cubes)
2 large eggs (beaten)
1 container sour cream
1 teaspoon vanilla extract (and ½ teaspoon almond extract, optional)


Cover the berries in half a cup of sugar and almond extract (if using). Cover the berries and let them stand for around 2 hours. Beat the whipping cream until it is foamy but not stiff, and then gradually add the 2 tablespoons of sugar, beating as you go, until the cream forms peaks. Cover and chill for around 2 hours. Preheat your oven to 450 degrees Fahrenheit.
Combine your flour with the remaining ¼ cup of sugar and the baking powder. Add your cubed butter and mix either using a pastry blender (if you’re lucky enough to have one!) or two forks until the mix is crumbly.
Whisk together the eggs, vanilla extract and sour cream. Add this to the flour mixture and stir very briefly (just until the dry ingredients are moist). Lightly grease a cup and use this to scoop and drop ¾ cup measurements of the dough onto a greased baking tray.
Bake for 12 - 15 minutes or until golden. Remove from the oven and allow to cool slightly, then split your shortcakes horizontally, spoon ½ cup of berry mixture onto each bottom half, top with a generous tablespoon of whipped cream, and then replace the top. 
Serve and enjoy!
